I've been hearing about this type of house on & off for years. If nothing else, bales of straw are good insulators (not to mention renewable) https://www.bbc.co.uk/news/uk-england-coventry-warwickshire-62440566

A lot of 'off gridders' have built houses from Straw bales, due mainly to the insulation properties. My big worry would be fire.
