    We're having Roast lamb, Roast potatoes, cabbage and gravy. - The second helping from the joint I cooked the other day.
    Of course it'll fit, you just need a bigger hammer.

    That's the Sunday roast over with and enjoyed the usual Chicken , with onion, leeks, peppers, broccoli, carrots and a few roast spuds with it, I am cutting back on potatoes.
    No room for pud, so a coffee will suffice for now.
    Now to enjoy the rest of this gorgeous sunny afternoon, pottering in the garden.

    We're going 'light' tonight. Apple and Pork rolls, salad and fries. But, I've done a joint of roast pork for tomorrow and Wednesday.

    Beef & black pudding casserole with a baked potato and veg. for me tonight.

    This does me for 4 meals.

    Ingredients:

    400g cubed beef
    4 slices of black pudding
    1 500 ml bottle of beer (I used Theakstons Old Peculier)
    1 onion
    2 garlic cloves
    1 litre beef stock
    Handful of peppercorns
    Handful of juniper berries
    Pinch of rock salt
    Flour to thicken

    Preheat the oven to 180c.

    First, I cut up the onion & garlic, and fry until soft, then put it in the pot.
    Seal the beef in the frying pan & put in the pot.
    Cut the black pudding into cubes, and put into pot.
    Pour the beer in.
    Pour the beef stock in (with the flour to thicken(the black pudding helps to thicken the casserole, so you won't need too much)).
    Crush the peppercorns, juniper berries & rock salt in a pestle & mortar and put in the pot.

    Put lid on pot, put in oven, and b***er off to the pub for the afternoon while it cooks.

    Very nice with jacket potato and roast vegetables.

    Oh, and I put in a squeeze of tomato puree, a handful of sultanas & some date flavoured balsamic vinegar too.

    Thanks Lex. Mrs R is quite interested in this.

    Now, has anyone ever made microwaved sponge pudding from scratch? - I love sponge pudding but can't be doing with the long steaming times.

    I've looked up a couple of recipes on line and it seems quite easy and the (microwave) cooking time is about 4 minutes. I might give a couple of recipes a try and see how I go.

    I've had man-flu over Easter and haven't really eaten much. But I'm feeling a lot better today and am now looking forward to roast chicken and chips tonight.

    Tomorrow, the remainder of the chicken will go into a Chinese curry.
    Of course it'll fit, you just need a bigger hammer.

    It has been a real b*gger to get over Margaret.

    My brother gave me a (sealed, unused) nasal spray yesterday. I used it as directed, 3 minutes later I was almost flat on the floor! I don't know what I was allergic to but Mrs R was bordering on calling an ambulance while I was wondering what all the black spots in front of my eyes were. The dog apparently was more interested in the chicken that I had started carving up after taking the spray! It took most of the day for me to recover, but I'm OK today. - Nasty stuff!
